		<description>So, while I can&#039;t attest to the wonders of the exact recipe, I can say that it modifies wonderfully,  I made the soup yesterday night for dinner.  Except that I hadn&#039;t wanted to go do groceries and I was out of all but 1 small potatoes but had 3 bunches of fresh carrots instead (what can I say?  Our shopping habits are such that we run either a chronic shortage or a surfeit of items.  Alright for potatoes, not so alright with toilet paper and the like.)  I&#039;m also vegetarian so I used vegetable stock instead of the chicken broth - fresh, homemade vegetable stock.

I kept the proportions 1:1 leeks to carrots &amp; 1.5 qt fresh stock and tarragon garnish at the end.  The soup was amazing.  And as excellent as the soup was yesterday, it was, if possible, even better today.  Really really excellent.

The leek sweating was a wonderful tip.  I really think that gave the soup some of its excellent nuance.</description>
